Apple Raisin Cakes
Ingredients2 eggs beaten 1 cup unsweetened applesauce 1 teaspoon cinnamon 2 teaspoons sugar 1 cup unbleached white flour 1/2 cup whole-wheat flour 2 teaspoons baking powder 2 teaspoons vanilla 1/2 cup golden raisins
MethodCombine all ingredients until blended.
Cook on a nonstick griddle over medium heat until both sides are browned, about 5 to 7 minutes. Serve with additional applesauce.
This recipe yields 6 servings. Serving size: 2 pancakes.
