Beef In Red Wine

Ingredients

Olive oil cooking spray as needed
3 slices nonfat turkey bacon cut 1 pieces
1 rump roast - (abt 3 lbs)
1 large onion peeled, stuck with
4 whole cloves
2 ounces grated carrot
3 large garlic cloves sliced thin
1 cup dry red wine
1 bay leaf
4 sprigs thyme
1/4 cup chopped flat-leaf parsley
2 large Russet potatoes peeled, and
cut into 6 pieces
2 medium carrots peeled, sliced
1 pound green beans ends snipped
Refrigerated butter-flavored cooking spray as needed
8 ounces mushrooms
Freshly-ground black pepper to taste
