Eggs A La Russe
Ingredients4 large eggs hard cooked 1/4 teaspoon coarsely-ground black pepper 6 tablespoons Thousand Island Dressing (see recipe) 4 Boston/Bibb lettuce leaves 1 teaspoon caviar = (or 1 tspn chopped ripe olives) 4 parsley sprigs
MethodRemove shells from hard-cooked eggs, cut in half length-wise.
Add pepper to Thousand Island Dressing.
On serving plates arrange two egg halves (cut-side down) on small lettuce leaf. Top with 1 1/2 tablespoons Thousand Island Dressing. Garnish top of each with 1/4 teaspoon of caviar and a sprig of parsley.
This recipe yields 4 servings.
