Pesto
Ingredients2/3 cup fresh basil leaves - (tightly packed) 3 scallions, including 2 green chopped 1 garlic clove minced 1 teaspoon dry-roasted sunflower seeds Freshly-ground black pepper to taste 3 teaspoons low-sodium fat-free chicken broth - (to 4) 1/2 tablespoon grated Parmesan cheese
MethodPlace first 5 ingredients in a blender or food processor. Pulse on and off until finely minced.
Add the stock to thin the mixture. Stir in cheese.
This recipe yields 1/2 cup.
