Quick Chili
Ingredients2 teaspoon olive oil 1 medium onion chopped 1 small red pepper chopped 4 garlic cloves minced 1 pound lean pork tenderloin trimmed, ground = (your butcher will do this for you) 3 tablespoons ground chili powder 1 teaspoon cinnamon 1/2 teaspoon allspice 2 cups canned tomatoes undrained, and coarsely chopped 2 cups low-sodium beef broth 1 tablespoon red wine 1 tablespoon Worcestershire sauce Freshly-ground black pepper to taste
MethodIn a stockpot over medium-high heat, heat the oil. Add the onion and pepper and saute for 5 minutes. Add the garlic and saute for 2 minutes. Add the pork and saute for 5 minutes.
Add the remaining ingredients and simmer over medium-low heat for 20 minutes.
This recipe yields 6 servings. Serving size: 1 cup.
