Shrimp Fried Rice

Ingredients

2 teaspoons sesame oil
1 cup chopped green onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1 cup sliced mushrooms
1 1/2 pounds deveined peeled shrimp
3 cups cooked rice
1/2 cup bean sprouts
1/8 teaspoon salt
1 teaspoon freshly-ground black pepper
1 teaspoon garlic powder
2 tablespoons lite soy sauce
1 cup egg substitute

Method

Heat the oil in a large wok or skillet. Stir-fry the onion, bell pepper, celery, and mushrooms for 5 minutes. Add the shrimp and stir-fry until pink.

Add the rice, bean sprouts, salt, pepper, garlic powder, and soy sauce. Stir-fry for 10 minutes.

Make a hole in the middle of the mixture and pour in the egg substitute. Cook the egg until done and mix into the rice mixture. Serve hot.

This recipe yields 8 servings. Serving size: 1 cup.
