Spicy Corn Salsa

Ingredients

2 cups corn kernels
1/4 cup diced ripe avocado
1/2 cup minced red onion
2 tablespoons minced seeded tomato
2 tablespoons minced jalape

Method

Combine all the ingredients in a medium-sized bowl. Cover and refrigerate for 1 hour.

Serve with low-fat baked corn chips, pita bread or as a condiment for grilled chicken, fish or beef.
