Three-Melon Soup
Ingredients3 cups cubed seeded watermelon 3 tablespoons unsweetened pineapple juice 2 tablespoons lemon juice 1/4 cantaloupe melon 1/8 honeydew melon
MethodCombine watermelon, pineapple juice and lemon juice in blender; process until smooth. Chill at least 2 hours or overnight.
Scoop out balls of cantaloupe and honeydew.
To serve, pour watermelon mixture into shallow bowls; garnish with cantaloupe and honeydew.
This recipe yields 4 servings.
