Tropical Kabobs
Ingredients3 cups combined peaches, nectarines, mangoes, and papaya, all cut into bite-sized pieces 1 tablespoon lemon juice 1 tablespoon brandy 1 tablespoon honey 2 teaspoons cinnamon
MethodSprinkle the fruit with the remaining ingredients. Prepare an outside grill with an oiled rack set 6 inches above the heat source. On a gas grill, set the heat to medium. Thread the fruit onto skewers (if you're using wooden skewers, be sure to soak them in warm water for at least 15 minutes first). Grill, turning constantly, for 10 minutes until the fruit is caramelized.
This recipe yields 6 servings. Serving size: 1/2 cup fruit.
