Turkey Minestrone

Ingredients

1/2 tablespoon olive oil
1 medium onion chopped
1 garlic clove minced
6 cups 98% fat-free no-salt-added canned
chicken broth
1 medium red-skinned potato scrubbed, diced
1/4 cup dried split peas
1/2 teaspoon crushed dried basil
1/2 teaspoon crushed dried thyme
1 small bay leaf
1 medium zucchini cut into 1 cubes
1 large ripe plum tomato seeded, diced
1 can cannellini beans - (15 oz) rinsed, drained
1 cup chopped cooked turkey meat
