Vanilla Peach Pudding

Ingredients

2 packages artificially sweetened low-fat
instant vanilla pudding
4 cups cold evaporated fat-free milk
1 teaspoon cinnamon
1/2 teaspoon almond extract
2 cups diced fresh peaches
6 strawberries sliced

Method

In a metal bowl, whip together the pudding mix, cold milk, cinnamon, and almond extract. Mix until thick. Fold in the peaches and gently stir. Spoon pudding into six individual dishes and top with strawberries.

This recipe yields 6 servings. Serving size: 1 cup.
